• We use only Certified Organic, Unenriched Grains and we source locally whenever possible

• The grain mills we work with grind our grains to order, so our grains are always freshly milled.

• We use only Bronze dies--This gives our pasta the rough, ridged texture that artisan pasta should have

• Our Base Pasta has only 2 ingredients: certified organic semolina and filtered water

• Our Ancient Grains Pastas are made using certified organic whole grain durum wheat & stone ground, certified organic whole grains (Spelt, Emmer/Farro, Hard Red Winter Wheat or Khorasan).
